    Vakhaaya Pulusu ( Brinjal Pulusu )



    Ingredients:
    Vakhaayalu - 250 Grams
    Onions - 3
    Green chillies - 4
    Tamarind - 25 Grams
    Jaggery
    Turmeric powder - Pinch

    Hing - Pinch
    Rice flour
    Curry leaves
    Oil
    Garlic cloves - 6
    Tempering seeds - 1 spoon
    Salt to taste
    Dried red chillies - 2

    Preparation:
    Heat some oil during a pan,add tempering seeds,red chillies,green chillies,garlic cloves,curry leaves,hing and saute for couple of minutes. Add turmeric powder,vakhaaya items and blend well,fry for couple of minutes. Now add stewed onions and provides it a stir,add tamarind juice,jaggery,some water as needed,salt and produce it to boil. Add coriander leaves and transfer into a bowl.Serve hot
