Vankaaya Pakodi Koora



Ingredients:
Brinjal - 250 Grams
Besan flour - 1 Cup
Onions - 2
Tomatoes - 2
Salt
Red chilli powder - 1 spoon
Turmeric powder - Pinch
Coriander powder - 1 spoon
Green chillies - 3
Ginger garlic paste - 1 spoon
Coriander leaves
Tempering seeds - 1 spoon
Cashew nuts
Oil

Preparation:
Take a bowl add herbaceous plant slices,onions,salt,red chilly powder,besan flour and blend well equally by adding very little quantity of water. Heat oil for deep preparation,drop herbaceous plant items in hot oil and deep fry until nice golden color..

Heat some oil in a very non stick pan,add tempering seeds,green chillies,onions and saute for a moment until brown color. Add turmeric,ginger garlic paste,red chilly powder and blend well,add tomatoes,salt and blend.

Cook until tender,fried herbaceous plant pakodi to frypan,mix well. Add some water,coriander powder,coriander leaves and blend well. Cover and cook for ten minutes until done,transfer into a bowl and garnish with cashew around the bend,coriander leaves.
