Vegetable Niligiri Kurma



Ingredients:
Boiled cauliflower - Half Cup
Boiled potatoes - Half Cup
Boiled carrot - Half Cup
Boiled beans - Half Cup
Boiled baby corn - 1/4 Cup
Peas - 1/4 Cup
Tomato paste - 1 Cup
Spinach paste - 1 Cup
Fresh cream - 1 spoon
Ghee
Green chillies - 4
Onion chopped - half Cup
Red chilli powder - 2 spoon
Salt to taste
Cumin powder - 1 spoon

Preparation:
Take a pan pour 3-4 tbsp ghee and melt it. Add green chillies,onion chopped 1 cup and saute for a minute. Add tomato paste 1 cup,cook for few minutes. Now add boiled beans,cauliflower,baby corn,potatoes,carrot,green peas and mix well,add some water and give it a stir.Cover and cook for 2-3 minutes,give it a stir. Add spinach paste 1 cup,salt to taste,red chilli powder 2 tbsp,cumin powder 1 tbsp,cream 1 tbsp and mix well. Cook on medium flame for 1 minute,transfer into a bowl,garnish with coriander leaves,serve hot.
