Vankaaya Perugu Curry


Ingredients:
Brinjal - 250 Grams
Curd - 1 cup
Salt
Turmeric - Pinch
Red chilli powder - 1 spoon
Coriander powder - 1 spoon
Coriander leaves
Onions - 2
Green chillies - 3
Ginger
Tomatoes - 2
Cumin seed - 1 spoon
Jaggery - Small Piece
Garam masala powder - 1 spoon

Oil

Preparation:
1.Heat some oil in a very pan,add cumin seeds,grated ginger,onions and saute for a moment.

2.Add turmeric,brinjal,salt and blend well,cover and cook for five minutes.

3.Take a bowl,combine curd,coriander powder,salt,red chilly powder,green chillies,coriander leaves and blend well.

4.Add tomatoes,cover and cook for an additional two minutes.Add grated jaggary and provides it a combination.

5.Add curd mixture,mix well.Cover and cook for two minutes.Sprinkle some coriander powder and serve hot.
