    Vankaya Ulli Masala (Brinjal Ulli Masala)

    Vankaya Ulli masala in telugu,Andhra style vankaya ulli masala,brinjal ulli masala in telugu language

    Ingredients:
    Brinjals-250gms
    Onions 1 cup
    Whole Garam Masala 1 tbsp
    Jinger-garlic paste - 1 spoon
    Green Chillies - 3

    Red Chilly powder - 1spoon
    Salt (to taste)
    Turmeric Powder - Pinch
    Coriander Powder - 1/2 spoon
    Coriander leaves
    Oil 2 tbsp

    Preparation:
    1.Take onions,whole garam masala in food processor and make a thick paste.

    2.Take a pan add 2 tbsp oil,ginger-garlic paste,green chillies cut and slitted.

    3.Add the masala paste to this mixture,saute this for 2-3min.

    4.Now add blanched brinjals,coriander powder to it and keep stirring.

    5.Cover and cook for 2-3 min.

    6.Saute this mixture for a while and add some water as we needed.Give it a stir

    7.Cover and cook on medium heat for few minutes.

    8.Garnish with fresh coriander leaves.Serve hot..!!
