
Ingredients:
Brinjal - 250 grams
Peanuts - 2 spoons
Coriander seeds - 1 spoon
Chana dal - 1 spoon
Urad dal - 1 spoon
Fenugreek seeds - 1/2 spoon
Sesame seeds - 1 spoon
Cumin seeds - 1/2 sppon
Garlic cloves - 4
Lemon juice - 1 spoon
Mustard seeds - 1/2 spoon
Curry leaves
Onions - 2
Turmeric powder - Pinch
Curd - 3 spoons
Green chillies - 3
Coriander leaves
Preparation:
1.Dry roast red chillies,peanuts,fenugreek seeds,urad dal,chana dal,sesame seeds,cumin seeds,garlic cloves and roast for few minutes till fragrant.
2.Blend the mixture into a fine powder,add lemon juice and some water,prepare a dough.
3.Now stuff the dough into brinjal which is cut into four quarters and set aside in a pan.
4.Add 2 tbsp of oil and cook on low flame and keep turning the brinjal in between.
5.Heat some oil in another pan,add mustard seeds,curry leaves,onions and add little bit of salt.Cook till nice golden brown colour.
6.Add turmeric powder,green chillies,coriander leaves and mix well.Add required amount of salt in curd and mix it well.
7.Add fried brinjal and mix gently,serve hot.
